Bourbon Snickerdoodle Blondies

Delicious blondies with a hint of bourbon and topped with cinnamon sugar coating. Yum!!

This recipe is so so sooooo easy!! I love making blondies because I usually have all the ingredients in my pantry anddddd they come together in a matter of minutes! This particular recipe doesn’t even require a stand mixer or hand mixer! Less dishes to clean in the end which is always a win in my book.

The Set Up

You’ll want to start this recipe out by preheating your oven and preparing your baking dish. I love using parchment paper when I bake any types of bars because it allows for easy clean up and you can easily lift up the bars in one go when they come out of the oven (after being properly cooled of course). This also allows for easy cutting of the bars at the end.

Snickerdoodle Blondies

Once your pan is prepared, melt the butter and add in the rest of your wet ingredients. You can use anywhere between 1 to 3 tablespoons of bourbon (or leave out completely) depending on how much you like the taste of it. Some people are bigger fans of alcohol in desserts than others.

Add in your dry ingredients and slowly incorporate into your wet ingredients. The cream of tartar is key to giving the blondies the snickerdoodle-like texture. Sprinkle your cinnamon sugar topping over the blondies and you’re good to go. SO EASY!!!

Bourbon Snickerdoodle Blondies

  • 1 cup unsalted butter, melted and cooled slightly
  • 1 1/2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 tsp vanilla
  • 2 tablespoons granulated sugar (for the topping)
  • 2 teaspoons cinnamon (for the topping)
  • 2 cups granulated sugar
  • 2 eggs, room temperature
  • 2 tablespoons bourbon whiskey
  • 2 1/2 cups all-purpose flour

INSTRUCTIONS

  1. Preheat oven to 350°F. Grease and line a 9×9″ baking pan with parchment paper and set aside.
  2. Using a fork or spoon, mix the melted butter and sugar until its well incorporated
  3. Add in the egg and bourbon and mix for another 30 seconds.
  4. In a separate bowl, combine flour, cream of tartar, and salt. Fold dry ingredients into wet, mixing until combined. Place into prepared baking pan.
  5. Mix together additional sugar and cinnamon and sprinkle over bars. Bake for 35 minutes, until a knife in the center comes out mostly clean
  6. Allow to cool completely before cutting into squares!
