Apple Crumb Cake

Delicious crumb cake packed with brown sugar and a delicious layer of cinnamon apples. The perfect treat to enjoy with a hot cup of coffee or tea during a crisp Fall morning.

My favorite breakfast dessert growing up was always new york style crumb cake. I used to LOVE getting it at bakeries up North. I added an apple layer to the crumb cake and it was the perfect duo.

There are a couple of steps to making the cake but it comes together pretty quickly. WARNING though that this recipe is not healthy. But then again none of my recipes are. This one is adapted from Sallys Bake Blog. Hope you guys enjoy!

Apple Crumb Cake

Cake

  • 2 and 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1.5 sticks of butter
  • 1 cup granulated sugar
  • 3 eggs
  • 1 cup greek yogurt
  • 1 tsp vanilla extract
  • 1 and 1/2 cups apples
  • 1/2 teaspoon cinnamon

Crumb Topping

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 tbsp cinnamon
  • 1/2 tsp salt
  • 2 sticks butter melted
  • 2 and 1/2 cup flour

Preheat oven to 350 and line a 9 by 13 pan with parchment paper.

Make the crumb topping by combining sugars, cinnamon and salt. Mix melted butter using a fork and add flour. Mixture should be crumbly.

For the cake, mix together flour, baking soda, powder, and salt. In a separate bowl, beat butter and sugar together on high speed. Add eggs, yogurt, and vanilla. Slowly add in dry ingredients. Once batter is done, pour into baking pan. Mix chopped apples with cinnamon and sprinkle over batter. Top with crumb topping and bake in the oven for 45 minutes.
