Hi everyone! Hope everyone had a relaxing Thanksgiving filled with delicious food and dessert! I had a small Thanksgiving this year and did a ton of baking. I ended up having leftover pie dough and wanted to use it up today.
I made brown sugar small batch poptarts. Makes four pop-tarts total so definitely would double or triple the recipe if you are looking to feed a crowd.

Brown Sugar Pop Tarts
Dough:
1/2 homemade pie crust (I use Molly Yeh’s recipe)
Filling:
1/4 cup brown sugar
1 tsp of flour
1 tsp of cinnamon
1/2 tbsp butter melted
Splash of vanilla
Glaze
1/2 cup powdered sugar
1/4 tsp cinnamon
1 tsp vanilla
1 tbsp milk (add more if it’s not a glaze consistency)
Instructions:
Preheat oven to 400 degrees. Roll out the pie dough into 8 identical rectangles. Lay out the dough onto a parchment lined cookie sheet.
Meanwhile, make the filling. Mix together the brown sugar, flour, melted butter cinnamon and vanilla. Scoop 1 tbsp of filling into center of a rectangle. Leave about 1 inch around the borders of the rectangle and brush the edges with an egg wash. Top with another rectangle and crimp edges with a fork. Poke a few holes on the top of the poptart. Repeat process until you have four poptarts.
Bake in the oven for 15 minutes. While it’s baking, make the glaze topping. Add the topping to the poptarts once they’ve cooled
